Spaghetti al vino rosso con nocciole

Per la stessa cena per cui ho preparato come antipasto le sfogliatine alle cipolle caramellate al mirin, con rosmarino e formaggio di capra, ho voluto scegliere un piatto principale scenografico. Da qualche tempo sulla bacheca di Pinterest su cui raccolgo le ricette da provare, c'erano due diversi spaghetti al vino rosso. Una delle due ricette era ispirata ad una che si trova a pag. 167 del libro "Tu come lo fai?" di Alessandro Borghese e che sono riuscita a recuperare sul blog Nuvole di farina: ricette per tutte le età.
Ovviamente non sono riuscita a trattenermi dal fare qualche cambiamento, nello specifico dall'aggiungere delle nocciole per un tocco piemontese. Mi piacerebbe provare questa pasta anche con aggiunta di pancetta.

Ingredienti per 4 persone
500 gr di spaghetti (se piatto unico, se no meglio farne meno)
500 ml di buon vino rosso corposo (io ho usato un nero d'avola)
100 gr di parmigiano grattugiato
sale
olio extravergine di oliva

Ho tritato le nocciole con un pestacarne (tranne qualcuna da usare come guarnizione) e le ho tostate velocemente in padella. Ho messo a bollire l'acqua salata per la pasta. Intanto ho messo in una padella dai bordi alti il vino e l'ho fatto bollire per 3-4 minuti circa per far evaporare la parte alcolica e ottenere un gusto più delicato. Poi ho abbassato la fiamma. Quando l'acqua nella pentola ha iniziato a bollire, ho buttato gli spaghetti e li ho lasciati ammorbidire. Poi li ho scolati con una schiumarola, in modo da conservare l'acqua di cottura e li ho messi a terminare la cottura nella padella con il vino. Per non farli diventare troppo secchi ho aggiunto anche dell'acqua di cottura. A circa un minuto dalla fine della cottura degli spaghetti, ho aggiunto un giro di olio extravergine di oliva e le nocciole, poi ho spento il fuoco e li ho fatti mantecare con il parmigiano. Ho servito guarnendo i piatti con le nocciole intere.

For the same dinner for which I prepared puff pastry with mirin caramelized onions, rosemary and goat cheese as an appetizer, I wanted to choose an attention-getting main dish. From some time on the Pinterest board on which I collect the recipes I want to try, I had two different red wine spaghetti. One of the two recipes was inspired by one at p. 167 of the book "Tu come lo fai?" by the chef Alessandro Borghese and I was able to recover the original from the blog Nuvole di farina: ricette per tutte le età.
Of course, I could not stop myself from making some alterations, specifically from adding hazelnuts as a Piedmont-style touch. I'd also like to try this pasta with an addition of bacon.

Ingredients for 4 people
500 gr of spaghetti (if it's a single dish, if it isn't it's better to make less)
500 ml of good full-bodied red wine (I used Nero d'Avola)
100 gr of grated Parmesan cheese
salt
extra virgin olive oil

I chopped the hazelnuts with a pestle (except some to use as a garnish) and I quickly roasted them in a pan. I put salted water in a pot to cook the pasta. Meanwhile, I put the wine in a pan with high sides and I made it boil for 3-4 minutes to let the alcohol evaporate and get a more delicate flavor. Then I lowered the flame. When the water in the pot began to boil, I put the spaghetti in it and I let them soften. Then I drained them with a perforated spoon, in order to keep the cooking water, and I put them to finish cooking in the pan with the wine. To prevent them from becoming too dry I added a little of the cooking water. Around a minute before the spaghetti were ready, I added some extra virgin olive oil and the hazelnuts, then I turned off the stove and added the Parmesan cheese, blending until they become creamy. I served the dishes garnished with the whole hazelnuts.
