Pasta tinta alle melanzane/Dyed pasta with eggplants

Avendo provato la tecnica di tintura della stoffa con la curcuma, mi è venuta l'idea di sperimentarla anche sulla pasta. Quindi ho aggiunto un cucchiaio di curcuma all'acqua della pasta.

As I recently tried the technique of dyeing fabric with turmeric, I got the idea to try it also on my pasta. So I added a tablespoon of turmeric to the water in which I boiled my spaghetti.

Intanto ho preparato un sugo facendo un soffritto con olio, aglio e un po' di peperoncino e cuocendoci mezza melanzana tagliata a cubetti (le dosi sono per due persone). Per tenere insieme i sapori ho sfumato le melanzane con 2-3 cucchiai di acqua di cottura alla curcuma.

Meanwhile, I prepared a sauce putting garlic and a chili pepper in a pan with evo oil. After sauteeing them I added half eggplant, cut into cubes (the doses are for two people). To blend the flavors I added 2-3 tablespoons of the turmeric cooking water.

Una volta cotte le melanzane, ho aggiunto un barattolo di pelati, li ho schiacciati bene e ho fatto restringere. Anche in questa fase si può aggiungere dell'acqua di cottura a seconda delle tempistiche.

Once the eggplants were cooked, I added a can of tomatoes, I crushed them well and I let the sauce shrink a little. In this phase you can add a bit of turmeric water to the tomato depending on the texture you want and on the timing.

Ho scolato la pasta, tinta di giallo dalla curcuma, e l'ho mescolata con il sugo.

I drained the pasta, tinted yellow by the turmeric, and I mixed it with the sauce.

A freddo ho aggiunto un giro di olio evo di qualità e tante scagliette di parmigiano. Buonissima!
Il gusto della curcuma si sposa bene agli altri ingredienti. E' molto delicato, ma lascia un retrogusto percepibile (per non parlare del profumo di spezie che invade la casa mentre si prepara questa ricetta!).

After putting it in a plate I added a little of quality extra virgin olive oil and many Parmesan flakes. It was really good!
The taste of turmeric goes well with the other ingredients. It's very delicate, but leaves a noticeable aftertaste (not to mention the smell of spices that invades the house while preparing this recipe!).

anch'io l'ho fatta tempo fa ma... sono stata subito rimbalzata dalla mia mamma, perché oltre alla pasta ho tinto, anche l'acquaio quando ho scolato la pasta..hem..comunque io metto la curcuma ovunque, anche nei dolci!

Posso capirla, anche a me si è leggermente macchiato il cucchiaio di legno che ho usato per girarla. Il lavello no, ma il mio è di metallo. La curcuma mi piace un sacco!
