Costine alla Mao

Chi ha seguito le cronache del mio viaggio di nozze in Cina sa della mia disperata ricerca dell'Hong Shao Rou, la ricetta per la pancetta di maiale tanto amata da Mao Tse Tung. La brasatura con zucchero e soia fa diventare la carne rossa, un colore che in Cina porta fortuna.
Ho ritrovato questo piatto a Milano, da Maoji, un ristorante specializzato in street food cinese. L'amica siculo-cinese con cui ci sono stata mi ha spiegato che è un piatto semplice da fare e che viene buonissimo anche con le costine, così ho provato a realizzarlo mettendo insieme la sua ricetta e un altro paio che ho trovato su internet.

INGREDIENTI (per 2-4 persone)
- costine di maiale
- olio di semi
- due cucchiai di zucchero bianco
- vino di riso
- un pezzo di zenzero fresco
- soia
- un bastoncino di cannella
- (ci sarebbe voluto dell'anice stellato, ma non ce l'avevo)
- un cipollotto rosso di Tropea
- acqua

The people who followed the chronicles of my honeymoon in China know of my desperate search for Hong Shao Rou, the pork belly so loved by Mao Tse Tung. Brazing with sugar and soy turns the meat red, a color that in China brings good luck.
I found this dish again in Milan, at Maoji, a restaurant specializing in Chinese street food. The Sicilian-Chinese friend with whom I went there explained me that it is a simple dish to make and that is also a good way to prepare ribs, so I tried to make it by putting together her recipe and another pair that I found on the internet.

INGREDIENTS (for 2-4 people)
- pork ribs
- seed oil
- two tablespoons of white sugar
- rice wine
- a piece of fresh ginger
- soy
- a cinnamon stick
- (star anise, in theory, but I didn't have it)
- a red spring onion
- water

Ho tagliato finemente il cipollotto e lo zenzero.
Ho unto il wok con abbondante olio di semi, l'ho fatto scaldare a fuoco basso e ho aggiunto lo zucchero. L'ho fatto caramellare e ho aggiunto le costine, il cipollotto e la cannella.
Ho mescolato in modo da fare caramellare per bene le costine.
Poi ho aggiunto ad occhio soia e vino di riso e ho mescolato di nuovo.

I cut the onion and ginger finely.
I greased the wok abunding with seed oil, I heated it over low heat and added the sugar. I caramelized it and added the ribs, spring onion and cinnamon.
I mixed the ribs to caramelize them.
Then I added the soy and rice wine and I mixed it again.

Ho coperto la carne con acqua e l'ho fatta cuocere per circa 50 minuti. In questo modo è diventata morbidissima, quasi gelatinosa. Nel frattempo il brodo si è ridotto del tutto.

I covered the meat with water and cooked it for about 50 minutes. In this way it become very soft, almost gelatinous. In the meantime, the broth shrunk completely.

Le saporitissime costine sono pronte, si possono mangiare da sole o accompagnate da riso bianco.

The tasty ribs are ready, you can eat them alone or accompanied with white rice.
